Supreme Rice

Banana Kiwi Pudding

Serves: 4

Ingredients

  • 1 1/3 cups cooked rice
  • 1 1/3 cups skim milk
  • 1 teaspoon vanilla extract
  • 2 tablespoons sugar
  • 1 ripe banana
  • 1/4 cup whipping cream
  • 2 kiwi fruit, sliced

Directions

Cook rice and milk in 2-quart saucepan over medium heat until thick and creamy, 5 to 8 minutes, stirring frequently. Remove from heat; cool. Stir in vanilla and sugar. Just before serving, mash banana; fold banana and whipped cream into pudding. Garnish with kiwi fruit slices.
