Supreme Rice

Granny's Dirty Rice

Serves: 8-10

Ingredients

  • 1 pound breakfast sausage
  • 1 pound ground beef
  • 1 tablespoon canola oil
  • 2 medium onions, chopped
  • 4 stalks celery, chopped
  • 1 green bell pepper, chopped
  • 8 cloves garlic, minced
  • 3 ½ cups water
  • 2 cups long grain Supreme Rice
  • 1 tablespoon of parsley, chopped
  • 1 cup green onions, chopped
  • Kosher salt and black pepper to taste

Directions

Heat a heavy cast-iron pot with 1 tablespoon of canola oil and brown breakfast sausage and ground beef until all fat is rendered. Add the onion, celery, bell pepper, and garlic and sauté for 5 minutes. Add 1 cup of water to deglaze the pot and simmer the meat and vegetables covered for an additional 5 minutes. Uncover and continue cooking until all the water evaporates. Add 3 ½ cups of water and 2 teaspoons of salt and bring up to a boil. Add 2 cups of rice, stir and bring back to a boil. Simmer covered for 15 minutes. After 15 minutes, add the parsley and fold rice mixture from bottom to top and put lid back on and simmer for an additional 5 or until rice is tender and liquid has evaporated. Serve hot garnished with green onions.
