Supreme Rice

Basil Tomato Salad

Serves: 6

Ingredients

  • 2 tablespoons olive oil
  • 2 tablespoons cider vinegar
  • 2 teaspoons fresh basil leaves*, chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 3 cups cooked rice, cooled
  • 2 medium tomatoes, chopped
  • 1 medium cucumber, peeled, seeded and chopped
  • 1 small red onion, chopped

Directions

Whisk together oil, vinegar, basil, salt and pepper in large bowl. Add rice, tomatoes, cucumber and onion; toss. Serve chilled.

Note:
*Substitute 1 teaspoon dried basil for fresh.
